Ingredients

  • Ice cubes
  • 3/4 oz. lime juice
  • 3/4 oz. Chile Grenadine or purchased grenadine syrup
  • 1 1/2 oz. silver tequila (optional)
  • 4-6 oz. ginger beer, chilled
  • Luxardo cherry
  • ### Chile Grenadine
  • 1 cup pomegranate juice
  • 1 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 pasilla or guajillo chile, seeded and crushed

Instructions

  1. Fill a cocktail shaker with ice and add lime juice, Chile Grenadine, and tequila (if using).
  2. Shake vigorously until the mixture is very cold.
  3. Strain the mixture into an ice-filled Collins glass.
  4. Top with 4 oz. ginger beer or 6 oz. if omitting tequila.
  5. Garnish with a Luxardo cherry.

  7. In a small saucepan, combine all the ingredients and bring to a boil, stirring to dissolve the sugar.
  8. Cover and let the mixture steep for 30 minutes.
  9. Strain the syrup through a fine-mesh strainer and chill before using.
