Ingredients

  • 1 1/2 oz. white rum
  • 1 oz. blue curaçao liqueur
  • 2 oz. pineapple juice
  • 3/4 oz. cream of coconut
  • 1 Maraschino cherry, for garnish
  • 1 Pineapple wedge, for garnish

Instructions

  1. Slice the pineapple wedge and set it aside.
  2. If the cream of coconut is chunky, warm it for 10 seconds in the microwave and then set it aside to cool.
  3. Fill a cocktail shaker with ice.
  4. Add white rum, blue curaçao, pineapple juice, and the cooled cream of coconut.
  5. Shake the shaker vigorously for 30 seconds or until it is very cold.
  6. Fill a glass half full of ice (a daiquiri glass or tall collins glass works well).
  7. Pour the cocktail into the glass.
  8. Garnish with the pineapple wedge on the side and the cherry.
  9. Serve immediately.
