Ingredients

  • 1.50-inch piece English cucumber, cut into 1/2-inch pieces
  • 3 oz Pimm's No. 1
  • 1.50 tablespoons Meyer lemon juice
  • Ice cubes
  • 1 sprig each fresh thyme, mint, and rosemary
  • 1 Meyer lemon slice
  • Chilled ginger beer
  • Cucumber spear, thyme, mint, and rosemary sprigs (garnishes)

Instructions

  1. Place the cucumber pieces in a cocktail shaker and gently muddle them using a muddler or the end of a wooden spoon.
  2. Pour in the Pimm's No. 1 and Meyer lemon juice.
  3. Fill a tall glass with ice and set it aside.
  4. Add ice to the Pimm's mixture in the shaker, cover, and shake vigorously for about 20 seconds.
  5. Strain the mixture and pour it into the prepared glass with ice.
  6. Add a lemon slice and additional ice cubes to the glass.
  7. Top off the glass with chilled ginger beer.
  8. Garnish with a cucumber spear and sprigs of thyme, mint, and rosemary.
