Ingredients

  • 1 cup almond milk
  • 1 egg
  • 1 tbsp. honey
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg

Instructions

  1. Combine almond milk, egg, honey, vanilla extract, cinnamon, and nutmeg in a blender.
  2. Blend for 2 minutes until the mixture becomes light and airy.
  3. Pour the mixture into a small saucepan and heat over low heat, stirring often for about 15 minutes. Ensure it doesn't boil.
  4. The eggnog should reach 160 F, or cook over low heat for 15 minutes.
  5. Allow the eggnog to cool, then transfer it to a mason jar or leave it in the pot.
  6. Chill in the fridge overnight or until thickened.
  7. Enjoy the eggnog as is, over ice, with a shot of your favorite booze, or stirred into a hot cup of coffee.
