Ingredients
- 1 cup almond milk
- 1 egg
- 1 tbsp. honey
- 1/2 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
Instructions
- Combine almond milk, egg, honey, vanilla extract, cinnamon, and nutmeg in a blender.
- Blend for 2 minutes until the mixture becomes light and airy.
- Pour the mixture into a small saucepan and heat over low heat, stirring often for about 15 minutes. Ensure it doesn't boil.
- The eggnog should reach 160 F, or cook over low heat for 15 minutes.
- Allow the eggnog to cool, then transfer it to a mason jar or leave it in the pot.
- Chill in the fridge overnight or until thickened.
- Enjoy the eggnog as is, over ice, with a shot of your favorite booze, or stirred into a hot cup of coffee.
