Ingredients
- 1 1/2 oz Aperol
- 1/4 oz fresh lemon juice
- 1/2 oz dry vermouth, preferably Dolin
- 1/2 oz honey syrup
- 1/4 oz Gran Classico Bitter amaro
- 1 tsp fresh orange juice
- 1 egg white
- 2 1/2 oz sparkling wine
Instructions
- Combine Aperol, lemon juice, vermouth, honey syrup, Gran Classico, orange juice, and egg white in a cocktail shaker.
- Shake the mixture without ice, then add ice and shake vigorously for 20 seconds.
- Strain the cocktail into a Collins glass over a small amount of ice.
- Slowly top with sparkling wine and add the garnish.
