Ingredients

  • 1 cup water
  • 1 cup demerara sugar (may substitute with Turbinado or light brown sugar)
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1 tsp grated dark chocolate (optional)
  • Ice (1 large cube and small regular cubes)
  • 2.50 oz Teeling Small Batch Irish whiskey
  • 0.50 oz spice syrup
  • 2 dashes Angostura bitters
  • Cinnamon stick, for garnish

Instructions

  1. Create the syrup by combining water, sugar, cinnamon, cloves, allspice, and chocolate in a saucepan. Boil for 30 seconds, then let it cool completely.
  2. Place a large ice cube in a rocks glass.
  3. In a mixing glass with ice, pour the whiskey, spice syrup, and bitters. Stir briefly.
  4. Strain the mixture into the rocks glass and garnish with a cinnamon stick.
