Ingredients

  • 1 cup full-fat milk
  • 1 free-range egg
  • 3 tablespoons golden caster sugar
  • 1 1/2 tablespoons Bourbon, rum or brandy
  • 1 1/2 tablespoons whipped cream (optional)
  • freshly grated nutmeg, to serve

Instructions

  1. Heat the milk in a non-stick saucepan until just below boiling point.
  2. In a large bowl, beat the eggs and sugar together until thoroughly combined.
  3. Pour half of the warm milk into the egg mixture, stirring well, then return everything to the pan with the remaining warm milk.
  4. Cook the mixture on low heat until it thickens, taking care not to let it boil.
  5. Add the Bourbon, rum, or brandy and stir well.
  6. Pour the eggnog into heat-proof glasses and top with whipped cream if desired.
  7. Grate a generous amount of fresh nutmeg over the top and serve immediately.
