Fizzy Thyme Berry Sparkler
A refreshing and fizzy punch with strawberries, thyme, pisco, Bonal, and sparkling wine.
Ingredients
- 1/8 cup water
- 1/8 cup sugar
- 1 tablespoon quartered strawberries
- 1 sprig fresh thyme
- 1/2 oz Strawberry-Thyme Syrup
- 3/4 oz pisco
- 3/4 oz Bonal
- 3/4 oz fresh lemon juice
- 3 oz dry sparkling wine, chilled
- Ice
Instructions
- In a small saucepan, combine water, sugar, strawberries, and thyme. Bring to a simmer over medium heat, stirring to dissolve sugar. Simmer for 30 minutes, stirring occasionally.
- Strain the mixture through a fine-mesh strainer to remove solids. Let it cool before using. The syrup can be refrigerated for up to 1 week.
- In a small pitcher, combine the Strawberry-Thyme Syrup, pisco, Bonal, and lemon juice. Stir to combine. The mix can be used immediately or covered and refrigerated for up to 10 hours.
- To serve, fill a Collins glass with ice. Add sparkling wine and the punch mix to the glass. Stir gently and serve immediately.
