Ingredients
- 1 egg (separated into yolk and white)
- 2 tbsp superfine sugar
- Pinch of salt
- 1/3 tsp vanilla extract
- 1/4 tsp grated nutmeg, plus extra for garnish
- 1/3 cup brandy
- 2 tbsp milk
Instructions
- Separate the egg yolk and white.
- Beat the egg yolk, slowly adding 1 tbsp of sugar until dissolved. Add vanilla extract, nutmeg, and salt, and mix until thick and pale yellow.
- Gradually beat in the brandy, then the milk.
- Cover and chill in the refrigerator for at least one hour.
- Just before serving, whip the egg white until soft peaks form.
- Gradually beat in the remaining 1 tbsp sugar until soft peaks form again.
- Gently fold the egg white mixture into the chilled egg yolk mixture.
- Serve in a glass and garnish with grated nutmeg.
