Ingredients

  • 1 egg (separated into yolk and white)
  • 2 tbsp superfine sugar
  • Pinch of salt
  • 1/3 tsp vanilla extract
  • 1/4 tsp grated nutmeg, plus extra for garnish
  • 1/3 cup brandy
  • 2 tbsp milk

Instructions

  1. Separate the egg yolk and white.
  2. Beat the egg yolk, slowly adding 1 tbsp of sugar until dissolved. Add vanilla extract, nutmeg, and salt, and mix until thick and pale yellow.
  3. Gradually beat in the brandy, then the milk.
  4. Cover and chill in the refrigerator for at least one hour.
  5. Just before serving, whip the egg white until soft peaks form.
  6. Gradually beat in the remaining 1 tbsp sugar until soft peaks form again.
  7. Gently fold the egg white mixture into the chilled egg yolk mixture.
  8. Serve in a glass and garnish with grated nutmeg.
