Ingredients

  • 0.90 oz. white rum
  • 0.45 oz. fresh lime juice
  • 0.30 oz. mint syrup
  • 1 oz. chilled soda water
  • Mint Syrup:
  • 6-8 sprigs fresh mint
  • 16 oz. rich simple syrup (2:1)

Instructions

  1. Boil water in a small saucepan and blanch the mint sprigs for 15 seconds.
  2. Plunge the blanched mint into a bowl of ice water for 1 minute, then pat dry.
  3. Remove the mint leaves and blend them with the simple syrup for 1 minute.
  4. Fine-strain the mint syrup into a clean bottle and refrigerate for up to 2 weeks.
  5. Combine rum, lime juice, and mint syrup in a pitcher and chill for at least 1 hour.
  6. When ready to serve, stir in the soda water and add crushed ice.
  7. Garnish with mint leaves.
