Ingredients

  • 3 leaves dinosaur kale (ribs removed)
  • 2 tablespoons lime juice
  • 1 1/2 tablespoons mandarin orange juice
  • 1/2 teaspoon fresh ginger, minced
  • 1/8 jalapeno pepper, seeds removed
  • 1/2 tablespoon maple syrup (or agave nectar)
  • 2 tablespoons water
  • 1/4 cup mezcal
  • 1 cup large ice cubes
  • 1 jalapeno slice (optional garnish)
  • 1 baby kale leaf (optional garnish)

Instructions

  1. In a blender, combine the kale, lime juice, mandarin orange juice, ginger, jalapeno, maple syrup, and water.
  2. Blend on low for 20 seconds, then switch to high for 40 seconds, or until the texture is consistent. If needed, gradually add water to the blender to aid in combining the ingredients.
  3. Transfer the blended mixture to a cocktail shaker. Add mezcal and ice.
  4. Close the shaker and shake vigorously for 15 seconds.
  5. Pour the cocktail into a serving glass without straining out the ice.
  6. Serve immediately and garnish with a jalapeno slice and a baby kale leaf if desired.
