Ingredients

  • 1 cup berry flavored sparkling water
  • 3 tablespoons neon pink simple syrup (made with equal parts water and sugar, pink dragon fruit, and vanilla extract)
  • 1 tablespoon half & half
  • Whipped cream (for garnish)
  • Maraschino cherry (for garnish)

Instructions

  1. Make the neon pink simple syrup by boiling equal parts water and sugar, then adding frozen pitaya and simmering for 10 minutes.
  2. After simmering, remove from heat, stir in vanilla extract, and strain the pitaya seeds out.
  3. Refrigerate the simple syrup until cold.
  4. When ready to serve, fill a glass with 1 cup of berry sparkling water.
  5. Stir in the simple syrup and drizzle in a tablespoon of half & half.
  6. Garnish with whipped cream and a maraschino cherry.
