Ingredients

  • 1 ripe pear (peeled and frozen)
  • 1/2 cup fresh raspberries (for coulis and garnish)
  • Pomegranate Italian soda (or sweetened pomegranate juice)
  • 2 oz sparkling wine (chilled) or ginger ale
  • Lemon juice

Instructions

  1. Peel the ripe pear, cut into quarters, and remove stems and seeds.
  2. Toss the cut pear in lemon juice and water to prevent browning, then place it in a sealed bag or airtight container and freeze for an hour or two.
  3. Prepare the raspberry coulis or puree by blending fresh raspberries with a dash of lemon juice and a teaspoon of sugar, if desired. Strain the mixture to remove seeds.
  4. Once the pear is frozen, puree it in a blender with a teaspoon of sugar. No need to strain the pear puree.
  5. In a large cocktail glass, add a couple of teaspoons of raspberry coulis/puree, a scoop of frozen pear slushie, a few ounces of pomegranate Italian soda, and top with sparkling wine. For a non-alcoholic version, use ginger ale instead of wine.
  6. Garnish with fresh raspberries and a sprig of mint, if desired.
