Ingredients
- 1/2 cup fresh raspberries
- 1/4 cup sugar
- 1/4 cup water
- 1 1/2 cups brewed black iced tea, cooled
- 2 tablespoons raspberry syrup
- 2 tablespoons fresh lemon juice
- 1 oz dark rum
- 1 oz light rum
- Mint leaves to garnish
Instructions
- In a small saucepan, combine raspberries, water, and sugar. Heat on high until boiling, stirring to dissolve sugar.
- Reduce heat and simmer for about 10 minutes until the syrup turns deep red and the raspberries soften.
- Remove from heat and let the raspberry syrup cool. Strain the mixture through a fine-mesh strainer, extracting as much liquid as possible. Discard the raspberries.
- In a large pitcher, mix the brewed tea, raspberry syrup, lemon juice, both rums, and 8 ice cubes. Stir for about 30 seconds to ensure proper mixing and melting of ice.
- Pour the cocktail into an ice-filled Collins glass and garnish with mint leaves and a straw.
