Ingredients

  • 1/2 cup fresh raspberries
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 1/2 cups brewed black iced tea, cooled
  • 2 tablespoons raspberry syrup
  • 2 tablespoons fresh lemon juice
  • 1 oz dark rum
  • 1 oz light rum
  • Mint leaves to garnish

Instructions

  1. In a small saucepan, combine raspberries, water, and sugar. Heat on high until boiling, stirring to dissolve sugar.
  2. Reduce heat and simmer for about 10 minutes until the syrup turns deep red and the raspberries soften.
  3. Remove from heat and let the raspberry syrup cool. Strain the mixture through a fine-mesh strainer, extracting as much liquid as possible. Discard the raspberries.
  4. In a large pitcher, mix the brewed tea, raspberry syrup, lemon juice, both rums, and 8 ice cubes. Stir for about 30 seconds to ensure proper mixing and melting of ice.
  5. Pour the cocktail into an ice-filled Collins glass and garnish with mint leaves and a straw.
