Ingredients

  • 1/8 cup fresh raspberries
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 3/8 cup brewed black iced tea, cooled
  • 2 tablespoons fresh lemon juice
  • 1 oz dark rum
  • 1 oz light rum
  • Mint leaves for garnish

Instructions

  1. In a small saucepan, combine raspberries, water, and sugar. Heat over high heat until boiling, stirring to dissolve sugar.
  2. Reduce to a simmer and continue to cook until the syrup is a deep red and berries are soft, about 10 minutes.
  3. Remove from heat and let cool. Strain through a fine-mesh strainer, pressing to extract as much liquid as possible. Discard the raspberries. Raspberry syrup will keep for one week in a sealed container in the refrigerator.
  4. In a glass, combine the brewed tea, raspberry syrup, lemon juice, both rums, and ice. Stir for about 30 seconds, making sure that all ingredients are incorporated and the ice begins melting.
  5. Garnish with a straw and mint leaves.
