Ingredients

  • 1.50 oz gin
  • 0.75 oz freshly squeezed lemon juice
  • 1 oz sage simple syrup
  • 1 pasteurized egg white
  • 1 fresh sage leaf for garnish
  • 3/4 cup sugar
  • 6-7 fresh sage leaves
  • 5/8 cup water

Instructions

  1. In a pot, combine water and sugar, bringing to a boil. Add fresh sage leaves, stir, and allow the syrup to simmer until the sugar dissolves. Let the syrup cool with the sage leaves in it.
  2. In a cocktail shaker, add gin, freshly squeezed lemon juice, cooled sage syrup, and egg white. Shake vigorously until a good foam forms.
  3. Add a couple of ice cubes to the shaker and continue shaking until the shaker feels cool to the touch.
  4. Strain the drink into a martini glass and garnish with a fresh sage leaf.
