Ingredients
- 1.50 oz gin
- 0.75 oz freshly squeezed lemon juice
- 1 oz sage simple syrup
- 1 pasteurized egg white
- 1 fresh sage leaf for garnish
- 3/4 cup sugar
- 6-7 fresh sage leaves
- 5/8 cup water
Instructions
- In a pot, combine water and sugar, bringing to a boil. Add fresh sage leaves, stir, and allow the syrup to simmer until the sugar dissolves. Let the syrup cool with the sage leaves in it.
- In a cocktail shaker, add gin, freshly squeezed lemon juice, cooled sage syrup, and egg white. Shake vigorously until a good foam forms.
- Add a couple of ice cubes to the shaker and continue shaking until the shaker feels cool to the touch.
- Strain the drink into a martini glass and garnish with a fresh sage leaf.
