Ingredients

  • 2 oz gin
  • 5 oz Aperol
  • 1/4 oz Absinthe
  • 8 oz milk
  • 1 1/2 oz Lemon Juice
  • 3/4 oz Simple Syrup
  • Grapefruit peel

Instructions

  1. In a mixing glass, combine gin, Aperol, absinthe, lemon juice, and simple syrup.
  2. Heat the milk in a pot to around 140 degrees, then remove from heat.
  3. Add the Aperol mixture to the warm milk and stir until the milk curdles.
  4. Line a strainer with cheesecloth and place it over a large container, with an empty container alongside.
  5. Pour the mixture through the cheesecloth-lined strainer, allowing it to strain until the stream becomes clear, then move the strainer to the second container.
  6. Discard the solids in the strainer and repeat the straining process until the entire mixture has been strained once.
  7. Repeat the process with the cloudy liquid to ensure the final strained mixture is clear.
  8. Pour 4 oz of the clarified mixture into a lowball glass over ice, express a grapefruit peel over top, and use the peel as a garnish.
