Smashing Berry Rye Spritz

Ingredients
- 1 cup water
- 1 cup sugar
- 1/2 cup mixed berries
- a few mint leaves
- 1 tablespoon simple syrup
- 1 shot white rye
- a couple of drops of rhubarb bitters
- 1 cup ice cubes
- 1/2 can soda water
Instructions
- In a saucepan, boil water and sugar until the sugar completely dissolves to make simple syrup. Let it cool. This syrup can be stored in the fridge for up to 2 months.
- Divide the mixed berries into a tall glass.
- Use the back of a spoon to smash the berries in the glass.
- Add the mint leaves to the glass and gently smash them with the berries.
- Pour the simple syrup into the glass (about 1 tablespoon or to taste).
- Add the shot of white rye to the glass.
- Add a couple of drops of rhubarb bitters to the glass.
- Add ice cubes to the glass.
- Pour in the soda water.
- Stir the ingredients in the glass and garnish with more mint leaves.
