Spiced Cilantro Cucumber Margarita

Ingredients
- 3 oz Persian cucumbers, roughly chopped
- 2 tbsp cilantro leaves and tender stems, roughly chopped
- 2 tbsp granulated sugar
- 1/2 tsp finely grated fresh lime zest
- 2 tbsp fresh lime juice
- 1/2 tsp minced jalapeño
- Pinch of sea salt
- 1 1/2 oz white tequila
- Ice
Instructions
- In a blender, blend the cucumbers, cilantro, sugar, lime zest, lime juice, and minced jalapeño until smooth.
- Strain the mixture through a fine-mesh sieve, collecting the liquid in a measuring cup and discarding the solids.
- Stir in a pinch of salt, then mix the strained cucumber liquid with tequila and set aside.
- Rim the glass with salt, if desired, by moistening the rim with a lime rind and dipping it into sea salt.
