Spiced Vanilla Bean Gin Delight

Ingredients
- 1 cup Sugar
- 1 cup Water
- 3 Cinnamon sticks
- 6 Cardamom Pods, lightly crushed (or 1/2 teaspoon ground)
- 1/2 teaspoon Nutmeg (freshly grated, if possible)
- 1 Vanilla Bean
- Juice of 2 Lemons
- Juice of 1/2 Lemon
- 1 Egg White
- 1/2 ounce Spiced Lemon Vanilla Simple Syrup
- 2 ounces Gin
- Ice
- Whole Cardamom Pod, to garnish
Instructions
- In a medium-sized saucepan, combine sugar, water, cinnamon sticks, cardamom pods, nutmeg, vanilla bean (scraped seeds and pod), and lemon juice. Bring to a boil, then simmer for 8 minutes.
- Remove from heat, cover, and let sit for 1 hour. Strain the syrup and discard solids. Store in the refrigerator.
- In a cocktail shaker, combine lemon juice, egg white, simple syrup, and gin. Shake for 20 seconds.
- Add ice to the shaker and shake again until chilled.
- Strain into a coupe glass and garnish with a cardamom pod or lemon twist.
