Ingredients

  • 1 cup Sugar
  • 1 cup Water
  • 3 Cinnamon sticks
  • 6 Cardamom Pods, lightly crushed (or 1/2 teaspoon ground)
  • 1/2 teaspoon Nutmeg (freshly grated, if possible)
  • 1 Vanilla Bean
  • Juice of 2 Lemons
  • Juice of 1/2 Lemon
  • 1 Egg White
  • 1/2 ounce Spiced Lemon Vanilla Simple Syrup
  • 2 ounces Gin
  • Ice
  • Whole Cardamom Pod, to garnish

Instructions

  1. In a medium-sized saucepan, combine sugar, water, cinnamon sticks, cardamom pods, nutmeg, vanilla bean (scraped seeds and pod), and lemon juice. Bring to a boil, then simmer for 8 minutes.
  2. Remove from heat, cover, and let sit for 1 hour. Strain the syrup and discard solids. Store in the refrigerator.
  3. In a cocktail shaker, combine lemon juice, egg white, simple syrup, and gin. Shake for 20 seconds.
  4. Add ice to the shaker and shake again until chilled.
  5. Strain into a coupe glass and garnish with a cardamom pod or lemon twist.
