Spicy Cilantro Cucumber Margarita

Ingredients
- 3 oz Persian cucumbers, roughly chopped
- 2 tbsp cilantro leaves and tender stems, roughly chopped
- 2 tbsp granulated sugar
- 1/2 tsp finely grated fresh lime zest
- 2 tbsp fresh lime juice (from about 1 lime)
- 1/2 tsp minced jalapeño
- Pinch of sea salt
- 1 1/2 to 2 oz white tequila
- Ice
Instructions
- In a high-speed blender, blend the cucumbers, cilantro, sugar, lime zest, lime juice, and minced jalapeño until the mixture is foamy and well blended.
- Pour the mixture into a fine-mesh sieve set over a large measuring cup and strain the liquid from the solids, discarding the solids.
- Stir in a pinch of salt into the strained cucumber liquid, then mix it with tequila. Set aside or refrigerate for up to 8 hours.
- When ready to serve, rim your glass with salt, if desired, by moistening the rim of a rocks glass with the reserved lime rinds and dipping it into sea salt.
- Fill the glass with ice and shake the margarita in an ice-filled cocktail shaker.
- Pour the margarita into the prepared rocks glass and garnish with a slice or two of jalapeño on top of the ice, as desired for heat.
