Ingredients
- 2 large egg yolks
- 2 tbsp sugar
- 3/4 cup whole milk
- Pinch of coarse salt
- 1/4 cup heavy cream
- 1/2 oz bourbon
- 1/2 oz dark rum
- 1/4 oz cognac
- Freshly whipped cream, for serving
- Freshly grated nutmeg, for serving
Instructions
- In a heatproof bowl, whisk egg yolks and sugar until pale and thick.
- Heat the milk and salt in a saucepan until it reaches a bare simmer.
- Slowly pour the hot milk mixture into the yolk mixture while whisking constantly.
- Pour the yolk mixture back into the saucepan and cook over medium heat until thickened.
- Strain the mixture into a large bowl and let it cool.
- Add cream, bourbon, rum, and cognac, then refrigerate overnight.
- Whisk the remaining sugar and egg whites in a heatproof mixer bowl set over simmering water until warm and smooth.
- Beat the mixture until stiff peaks form and fold into the eggnog.
- Pour into glasses, top with whipped cream, and sprinkle with nutmeg.
