Ingredients

  • 2 large egg yolks
  • 2 tbsp sugar
  • 3/4 cup whole milk
  • Pinch of coarse salt
  • 1/4 cup heavy cream
  • 1/2 oz bourbon
  • 1/2 oz dark rum
  • 1/4 oz cognac
  • Freshly whipped cream, for serving
  • Freshly grated nutmeg, for serving

Instructions

  1. In a heatproof bowl, whisk egg yolks and sugar until pale and thick.
  2. Heat the milk and salt in a saucepan until it reaches a bare simmer.
  3. Slowly pour the hot milk mixture into the yolk mixture while whisking constantly.
  4. Pour the yolk mixture back into the saucepan and cook over medium heat until thickened.
  5. Strain the mixture into a large bowl and let it cool.
  6. Add cream, bourbon, rum, and cognac, then refrigerate overnight.
  7. Whisk the remaining sugar and egg whites in a heatproof mixer bowl set over simmering water until warm and smooth.
  8. Beat the mixture until stiff peaks form and fold into the eggnog.
  9. Pour into glasses, top with whipped cream, and sprinkle with nutmeg.
