Ingredients

  • 1/6 cup blanched almonds
  • 3 Tbsp plus 1 tsp granulated sugar, divided
  • 3/5 cup whole milk
  • 1/5 cinnamon stick
  • Lemon peel
  • 1/5 tsp pure vanilla extract
  • A pinch of baking soda
  • 1 large egg yolk
  • 2 Tbsp white rum or aguardiente

Instructions

  1. In a food processor, blend the almonds and 1 tsp of sugar until finely ground.
  2. In a saucepan, bring the milk, cinnamon, lemon peel, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes.
  3. In a bowl, whisk the egg yolk, 3 Tbsp of sugar, and ground almonds until thick and pale.
  4. Remove the cinnamon and lemon peel from the milk mixture, then slowly add the milk to the yolk mixture while whisking constantly.
  5. Return the mixture to the pan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  6. Allow the mixture to cool, then stir in the rum.
  7. Serve chilled.
