Sweet Almond Bliss
A creamy and indulgent cocktail with flavors of almonds, cinnamon, and vanilla, complemented by a hint of rum.
Ingredients
- 1/6 cup blanched almonds
- 3 Tbsp plus 1 tsp granulated sugar, divided
- 3/5 cup whole milk
- 1/5 cinnamon stick
- Lemon peel
- 1/5 tsp pure vanilla extract
- A pinch of baking soda
- 1 large egg yolk
- 2 Tbsp white rum or aguardiente
Instructions
- In a food processor, blend the almonds and 1 tsp of sugar until finely ground.
- In a saucepan, bring the milk, cinnamon, lemon peel, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes.
- In a bowl, whisk the egg yolk, 3 Tbsp of sugar, and ground almonds until thick and pale.
- Remove the cinnamon and lemon peel from the milk mixture, then slowly add the milk to the yolk mixture while whisking constantly.
- Return the mixture to the pan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
- Allow the mixture to cool, then stir in the rum.
- Serve chilled.
