Ingredients

  • 1/2 cup frozen coconut milk cubes
  • 4 oz pineapple juice (unsweetened)
  • 1/4 cup frozen pineapple chunks
  • 2 oz light rum (coconut rum recommended)
  • Optional Garnishes:
  • Pineapple slice
  • Maraschino cherry

Instructions

  1. Freeze the coconut milk in an ice cube tray at least 5 to 6 hours before making the pina coladas.
  2. In a blender, combine the pineapple juice, frozen coconut milk cubes, frozen pineapple, and rum. Blend until smooth.
  3. Add a handful or two of ice cubes to the blender and blend until the mixture becomes frozen and frothy.
  4. Pour the pina colada into a cocktail glass or glasses.
  5. Garnish with a pineapple slice and a maraschino cherry, if desired.
  6. Serve with a straw and enjoy immediately.
