Tropical Bliss Piña Colada
A creamy and refreshing rum cocktail with pineapple juice and coconut cream, garnished with a pineapple wedge for a tropical touch.
Ingredients
- 3.50 tablespoons caster sugar
- 2 oz white rum
- 2.50 oz pineapple juice
- 1.70 oz coconut cream
- 1 pineapple wedge, for garnish
Instructions
- In a saucepan, heat the sugar and 3.5 tablespoons of water until the sugar dissolves. Let it cool. This will make more syrup than needed but can be stored in the fridge for a few weeks.
- In a blender, combine the rum, pineapple juice, coconut cream, 2 teaspoons of the sugar syrup, and a small handful of ice. Blend until smooth.
- Pour the mixture into a piña colada cocktail glass over more ice, if desired.
- Garnish with a pineapple wedge before serving.
