Ingredients
- 3/4 cup Whole Milk
- 1/3 cup Heavy Whipping Cream
- 1/4 teaspoon Ground Nutmeg
- Pinch of Salt
- 1 1/2 tablespoons Sugar
- 1 large Egg Yolk
- 1/2 teaspoon Vanilla Extract
Instructions
- In a saucepan, heat the milk, cream, salt, and nutmeg over medium heat, stirring frequently, until just warmed.
- In a small bowl, whisk the sugar and egg yolk together until fully combined.
- Take 2 to 3 scoops of the warmed milk mixture and slowly pour it into the egg yolk mixture, stirring constantly.
- Pour the warmed egg yolk mixture into the saucepan with the remaining milk and cream mixture.
- Bring the eggnog to a slow boil, whisking continuously until the mixture reaches 160°F.
- Remove from heat and stir in the vanilla extract.
- Strain the mixture through a fine mesh sieve into a pitcher and cover with plastic wrap.
- Chill the pitcher in the refrigerator for about 2 hours to thicken the eggnog.
