Ingredients

  • 3/4 cup Whole Milk
  • 1/3 cup Heavy Whipping Cream
  • 1/4 teaspoon Ground Nutmeg
  • Pinch of Salt
  • 1 1/2 tablespoons Sugar
  • 1 large Egg Yolk
  • 1/2 teaspoon Vanilla Extract

Instructions

  1. In a saucepan, heat the milk, cream, salt, and nutmeg over medium heat, stirring frequently, until just warmed.
  2. In a small bowl, whisk the sugar and egg yolk together until fully combined.
  3. Take 2 to 3 scoops of the warmed milk mixture and slowly pour it into the egg yolk mixture, stirring constantly.
  4. Pour the warmed egg yolk mixture into the saucepan with the remaining milk and cream mixture.
  5. Bring the eggnog to a slow boil, whisking continuously until the mixture reaches 160°F.
  6. Remove from heat and stir in the vanilla extract.
  7. Strain the mixture through a fine mesh sieve into a pitcher and cover with plastic wrap.
  8. Chill the pitcher in the refrigerator for about 2 hours to thicken the eggnog.
