Ingredients
- 2 oz London dry gin
- 1/2 oz yuzu juice
- 3/4 oz simple syrup
- 1 oz aquafaba (or egg whites)
- 4 Thai basil leaves
- Peychaud's bitters
Instructions
- In a shaker, muddle Thai basil leaves with simple syrup.
- Add London dry gin, yuzu juice, and aquafaba (or egg whites) to the shaker.
- Dry shake the ingredients for about 10 seconds.
- Add 3 ice cubes to the shaker and shake vigorously for about 10 more seconds.
- Strain the cocktail into a rocks glass filled with ice.
- Top the cocktail with soda until the foam rises slightly above the edge of the glass.
- Garnish with a Thai basil leaf and a few drops of Peychaud's bitters.
