Ingredients

  • 2 oz London dry gin
  • 1/2 oz yuzu juice
  • 3/4 oz simple syrup
  • 1 oz aquafaba (or egg whites)
  • 4 Thai basil leaves
  • Peychaud's bitters

Instructions

  1. In a shaker, muddle Thai basil leaves with simple syrup.
  2. Add London dry gin, yuzu juice, and aquafaba (or egg whites) to the shaker.
  3. Dry shake the ingredients for about 10 seconds.
  4. Add 3 ice cubes to the shaker and shake vigorously for about 10 more seconds.
  5. Strain the cocktail into a rocks glass filled with ice.
  6. Top the cocktail with soda until the foam rises slightly above the edge of the glass.
  7. Garnish with a Thai basil leaf and a few drops of Peychaud's bitters.
